Kabayaki is a popular method of preparing fish, particularly eel (unagi). Deboning the eel and cutting the fillets into pieces to thread onto skewers are the first steps in the preparation. The fish is coated in a sweet soy sauce-based glaze known as kabayaki sauce, which is comparable to teriyaki sauce.
