Size, Colour and Appearance
Straight cut fries have practically parallel sides and smooth surfaces. Length grading and sorting reduce excessive slivers, scraps and irregular pieces, helping maintain a more uniform appearance in each portion.
The products are checked for black spots, discolouration, sugar ends, burnt parts and other visible defects. Frying colour may be selected from lighter to medium shades according to the product requirement, while remaining reasonably uniform within the same batch.
Coated fries are available for menus requiring a more defined outer surface. Uncoated fries retain a traditional potato appearance and are suitable for QSR menus that prefer a simpler product style.
Texture and Packing
The fries should retain a characteristic potato flavour without bitterness, rancidity, scorched flavour or foreign odours. Texture should not be excessively hard, soft, oily or soggy. Hollow sections, pull-away and inconsistent internal texture are also included in the product inspection.
