Frozen Potato Wedge Production

Frozen potato wedges are prepared from mature, sound potatoes suitable for processing. The raw potatoes are inspected, washed, sorted and trimmed to remove unsuitable portions before cutting.

The potatoes are cut lengthwise into uniform wedge-shaped pieces, then processed to maintain a clean appearance, reasonably uniform colour and stable product quality.

Depending on the agreed specification, the wedges may be blanched, seasoned and par-fried in edible vegetable oil before quick freezing. The processing conditions are arranged to maintain colour, flavour and texture during frozen storage and transportation.

The product is quick frozen until the temperature at the thermal centre reaches -18°C or below. Frozen potato wedges should be stored and transported at -18°C or below throughout the cold chain.

Quality Requirements for Frozen Wedge Cut French Fries

  • Free from excessive blemishes, eyes and discolouration
  • Reasonably free from burnt portions and other frying defects
  • Neither excessively hard nor excessively soft or soggy after preparation

Piece size, cut consistency, broken pieces, surface colour and frying condition are also important inspection points. Excessive variation may affect portion presentation, cooking time and final appearance.

For seasoned frozen potato wedges, seasoning distribution and flavour consistency should also be checked.

Raw Material Selection and Processing Control

Raw potato quality directly affects the frying colour, texture and appearance of frozen wedge cut French fries. Mature potatoes with suitable dry matter, shape and processing characteristics are normally selected to achieve a firm interior and satisfactory frying colour.

Raw potatoes should be sorted to remove green, damaged, sprouted or seriously discoloured tubers. Washing and trimming help remove soil, surface defects and unsuitable portions before cutting.

Frozen wedge cut French fries are available in several styles according to market preference.

  • Skin-on potato wedges retain part of the natural potato skin and provide a more rustic appearance. They are commonly used by restaurants, pubs, casual dining chains and foodservice companies.
  • Skin-off potato wedges have a cleaner and more standardised appearance, making them suitable for frozen food ranges and menus requiring greater visual consistency.
  • Seasoned potato wedges provide stronger flavour and convenient preparation. Seasonings may include salt, herbs, paprika, pepper, garlic or other flavour combinations.
