The potatoes so prepared are frozen and stored at temperatures necessary for their preservation. Before heating, patties present a bright, uniform white to light cream color or light brown; after heating, a fairly uniform golden-brown. The texture is firm and tender, practically free from hard, mushy, pasty, soggy, dry, or oil-soaked pieces.
